Whip heavy whipping cream until soft peaks form, then add ½ cup creamer and spices, mixing until combined. Stir in 1 tsp vanilla and set aside.
In a large bowl, beat 5 eggs until combined. Add remaining ½ cup creamer, 2 tsp vanilla and water, whisking to combine. Whisk in butter.
In a separate bowl, combine flour, sugar and salt. Stir wet egg mixture into dry ingredients, mixing just until combined.
Spray skillet with cooking spray and cook about ¼ cup of batter at a time over medium heat. Cook for about 2 minutes on each side.
Layer stacked crepes with heavy whipping cream mixture, then refrigerate overnight. Top with additional cinnamon and nutmeg before serving slices.
